Ram Hall Farm is now run by the 5th and 6th generation of the Fletcher family having farmed the land here since 1881.
Berkswell Cheese has been made on our farm in the Midlands for over 30 years. The milk used comes exclusively from our own flock of Friesland dairy ewes, all of whom were born and bred on the farm.
Berkswell is a raw milk cheese using traditional rennet and matured for a minimum of 4 months.
Availability is year round and in 5 portion sizes plus 'Berkswell Baby' an individual cheese of approximately 800-900g
Berkswell has a creamy paste with an initial nutty and or caramal taste followed by a fruity acidity with pineapple notes. It's lasting impression is the full long lasting aftertaste which makes a second bite irresistible!
Quince jelly or paste is perfect for hard sheep milk cheeses.
